Ingredients
- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable or chicken broth
- ยฝ tsp nutmeg
- ยฝ tsp cinnamon
- Salt & pepper, to taste
- ยฝ cup heavy cream or coconut milk (optional)
Instructions
- Add squash, onion, garlic, broth, nutmeg, cinnamon, salt, and pepper to the crockpot.
- Cook on low 6โ8 hours or high 3โ4 hours until squash is tender.
- Blend until smooth using an immersion blender.
- Stir in cream or coconut milk before serving.
