Slow Cooker Pepper Steak

Directions

  1. In a large skillet over medium-high heat, sear the beef strips for 2–3 minutes until browned but not fully cooked. Transfer to the slow cooker.
  2. Add the sliced bell peppers, onion, and minced garlic to the slow cooker.
  3. In a small bowl, whisk together soy sauce, beef broth, brown sugar, black pepper, and sesame oil if using. Pour over the beef and vegetables.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the beef is tender and the vegetables are just cooked.
  5. In the last 20 minutes of cooking, mix the cornstarch with water to make a slurry and stir it into the slow cooker to thicken the sauce. Let cook until the sauce has thickened.
  6. Taste and adjust seasoning with more pepper or soy sauce if needed.
