Directions
- In a large skillet over medium-high heat, sear the beef strips for 2–3 minutes until browned but not fully cooked. Transfer to the slow cooker.
- Add the sliced bell peppers, onion, and minced garlic to the slow cooker.
- In a small bowl, whisk together soy sauce, beef broth, brown sugar, black pepper, and sesame oil if using. Pour over the beef and vegetables.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the beef is tender and the vegetables are just cooked.
- In the last 20 minutes of cooking, mix the cornstarch with water to make a slurry and stir it into the slow cooker to thicken the sauce. Let cook until the sauce has thickened.
- Taste and adjust seasoning with more pepper or soy sauce if needed.
