Directions

  1. Remove steaks from the refrigerator and let them sit at room temperature for 20–30 minutes.
  2. Pat steaks dry with a paper towel; this helps create a beautiful sear.
  3. Rub both sides with olive oil, minced garlic, salt, and black pepper. Add optional herbs if desired.
  4. Preheat a skillet or grill over medium-high heat until very hot.
  5. Place steaks on the hot surface and cook for 3–5 minutes per side for medium-rare, adjusting time for desired doneness.
  6. Optional: During the last minute of cooking, add butter to the pan and spoon it over the steaks to enhance flavor and juiciness.
  7. Remove steaks from heat and let them rest 5–10 minutes; this allows juices to redistribute for a tender result.
  8. Slice against the grain and serve immediately.
