Ingrédients

Chicken:

  • 8 pieces bone-in, skin-on chicken drumsticks and/or thighs
  • 1 1/2 tsp salt
  • 2 tbsp avocado oil
  • 1 tsp smoked paprika
  • 1 tsp ground black pepper

Pepper Rice:

  • 2 tbsp salted butter
  • 1 large sweet onion, diced
  • 1 large red bell pepper, diced
  • 5–6 garlic cloves, minced
  • 3 tbsp diced sun-dried tomatoes in oil
  • ½ cup roasted bell pepper, diced
  • 1–2 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp each dried: thyme, rosemary, oregano, parsley, basil
  • 1 ½ cups jasmine rice
  • 2 ½ cups chicken broth
  • 2 tbsp freshly chopped parsley, for garnish
