Directions
- Allow salmon to sit at room temperature for 15–20 minutes before cooking to ensure even cooking. Meanwhile, prepare all ingredients. Combine salmon seasonings in a small bowl and set aside.
- In a medium measuring cup, whisk together all the glaze ingredients. Keep cool until ready to use so the cornstarch does not activate prematurely.
- Preheat the oven to 375°F (190°C).
- Heat 1–2 tablespoons oil in a 12-inch oven-safe skillet over medium-high heat. Add broccoli and sauté for 4 minutes until slightly softened. Remove and set aside.
- Pat salmon fillets dry with paper towels. Sprinkle seasoning evenly over each piece, pressing gently onto the surface.
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Place salmon fillets skin-side down if applicable. Sear for 3 minutes until lightly browned.
- Reduce heat to medium and pour in the prepared glaze. Bring to a boil, allowing the sauce to thicken. Reduce heat to medium-low and baste the salmon with the sauce for 2 more minutes.
- Return broccoli to the skillet, arranging around the salmon. Transfer the skillet to the preheated oven and bake for 7 minutes.
- Switch oven to low broil (≈ 400°F / 200°C) and cook 1–2 more minutes to caramelize the top. Watch carefully to prevent burning.
- Remove from oven and spoon extra glaze over the salmon. Let rest for 5–10 minutes; internal temperature should reach 145°F (63°C).
- Serve immediately over cooked rice, spooning remaining glaze and broccoli on the plate.
