These Homemade Steak Gorditas are a mouthwatering Mexican-inspired dish featuring tender, flavorful steak wrapped in warm, freshly made corn gorditas. Ingredients

For the Steak:

  • 1 lb (450 g) chuck steak or preferred cut
  • Salt, to taste
  • 1 tablespoon coarse steak seasoning
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter

For the Gorditas:

  • 1 3/4 cups (415 ml) hot water
  • 1/2 teaspoon salt
  • 2 cups (240 g) yellow or white corn masa harina
  • 1 teaspoon baking powder
  • 1 1/2 tablespoons olive oil, plus extra for cooking

For the Salsa Verde:

  • 2–3 large tomatillos, washed and quartered
  • 2–3 serranos, chopped
  • 1 garlic clove, sliced
  • 1/4 sweet onion
  • 1 tablespoon lime juice
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt, to taste

Optional Garnishes:

  • Beans
  • Cheese
  • Guacamole
  • Lettuce
