Instructions
- In a large pot, brown the ground beef with the diced onion over medium heat. Drain excess fat if necessary.
- Add black pepper, oregano, basil, seasoning salt, and onion soup mix. Stir to combine.
- Pour in water, tomato sauce, and soy sauce. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15 minutes.
- Add diced tomatoes, corn, celery, celery leaves, carrots, and potatoes. Bring back to a boil, then reduce heat and simmer uncovered until the vegetables are tender, about 30 minutes. Add more water if needed for desired consistency.
- Taste and adjust seasoning with garlic salt.
- Serve hot with shredded Parmesan cheese and a dollop of sour cream.
