Directions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish with 1 teaspoon olive oil.
  2. In a bowl, combine cherry tomatoes, garlic, remaining olive oil, oregano, salt, and pepper. Toss until tomatoes are evenly coated.
  3. Arrange the cod fillets in the baking dish, spacing them evenly. Spoon the tomato mixture over and around the fish.
  4. Bake in the preheated oven for 15–20 minutes, or until the cod is opaque and flakes easily with a fork. The tomatoes should be slightly blistered and juicy.
  5. Optional: Squeeze fresh lemon juice over the fish and garnish with chopped parsley before serving.
