Directions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish with 1 teaspoon olive oil.
- In a bowl, combine cherry tomatoes, garlic, remaining olive oil, oregano, salt, and pepper. Toss until tomatoes are evenly coated.
- Arrange the cod fillets in the baking dish, spacing them evenly. Spoon the tomato mixture over and around the fish.
- Bake in the preheated oven for 15–20 minutes, or until the cod is opaque and flakes easily with a fork. The tomatoes should be slightly blistered and juicy.
- Optional: Squeeze fresh lemon juice over the fish and garnish with chopped parsley before serving.
