Arizona Sunshine Lemon Pie

Directions

  1. Preheat oven to 350°F (175°C). If using a frozen pie crust, place it on a baking sheet for stability.
  2. Chop the lemon and remove any seeds. Add the whole lemon (including peel) to a blender.
  3. Add eggs, melted butter, vanilla, and sugar to the blender. Blend until smooth, starting at a medium speed and gradually increasing to high.
  4. Pour the mixture into the prepared pie crust. Bake for 40 minutes, or until the filling sets.
  5. Allow the pie to cool completely, then refrigerate until chilled.

For the Topping:

6. Optional: freeze a bowl and beaters for 20 minutes before whipping to achieve firmer peaks.
7. Combine whipping cream and sugar in a chilled bowl. Whip until soft peaks form.
8. Slice the chilled pie and top each piece with a dollop of whipped cream. Serve chilled for the best flavor, though it can also be enjoyed at room temperature.
