Directions
- Preheat oven to 350°F (175°C). If using a frozen pie crust, place it on a baking sheet for stability.
- Chop the lemon and remove any seeds. Add the whole lemon (including peel) to a blender.
- Add eggs, melted butter, vanilla, and sugar to the blender. Blend until smooth, starting at a medium speed and gradually increasing to high.
- Pour the mixture into the prepared pie crust. Bake for 40 minutes, or until the filling sets.
- Allow the pie to cool completely, then refrigerate until chilled.
For the Topping:

7. Combine whipping cream and sugar in a chilled bowl. Whip until soft peaks form.
