Ingredients

Pastry:

  • 1 egg yolk
  • 3 tablespoons (45 ml / 1.5 fl oz) cold water, or as needed

Frangipane:

  • ½ cup (113 g / 4 oz) butter, softened
  • ½ cup (100 g / 3.5 oz) white sugar
  • 1 large egg, beaten
  • 1 egg yolk
  • 1 tablespoon (15 ml / 0.5 fl oz) calvados (apple brandy)
  • ⅔ cup (70 g / 2.5 oz) ground almonds
  • 2 tablespoons (16 g / 0.5 oz) all-purpose flour

Filling & Topping:

  • 4 medium sweet apples, peeled, cored, halved, and thinly sliced
  • 1 teaspoon (4 g / 0.14 oz) white sugar for decoration
  • ¼ cup (60 ml / 2 fl oz) apricot jelly
