Directions
- Make the pastry: In a medium bowl, stir together the flour and salt. Add the softened butter, egg yolk, and cold water; mix until the dough forms large crumbs. If too dry to hold together, add more water, 1 teaspoon at a time. Shape into a ball, wrap in plastic, flatten slightly, and refrigerate for at least 30 minutes, or until firm. This can be prepared up to three days ahead.
- Make the frangipane: Using an electric mixer, cream butter and ½ cup sugar in a medium bowl until light and fluffy. Gradually beat in the egg and remaining yolk, one at a time. Stir in calvados. Combine the ground almonds and 2 tablespoons flour, then fold into the butter mixture. Set aside.
- Prepare the crust: Roll out the chilled pastry into a 12-inch (30 cm) circle on a lightly floured surface. Fold loosely into quarters and center in a 10-inch (25 cm) tart or pie pan. Unfold and press into the bottom and sides. Prick the bottom with a fork and flute the edges. Chill the pastry again until firm.
- Preheat oven: Preheat the oven to 400°F (200°C). Place a baking sheet in the oven to preheat as well.
- Assemble the pie: Spread the frangipane evenly over the chilled crust. Arrange the apple slices in an overlapping spiral pattern, pressing each slice into the frangipane until it touches the pastry base, then overlap the previous slice, working from the outside edge to the center.
- Bake the pie: Place the pie on the preheated baking sheet. Bake at 400°F (200°C) until the filling begins to brown, about 15 minutes. Reduce the oven temperature to 350°F (175°C) and bake for another 10 minutes. Sprinkle sugar over the top and return to the oven for an additional 10 minutes until the sugar caramelizes lightly.
- Finish and serve: Cool the pie on a wire rack. Just before serving, warm the apricot jelly and thin with a little water if necessary. Brush over the apples for a glossy finish. Slice and enjoy!
