Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In a large mixing bowl, cream together butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing just until combined.
- In a small bowl, toss diced apples with brown sugar and cornstarch until evenly coated.
- Gently fold the apple mixture into the batter.
- Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cupcakes to cool in the tin for a few minutes, then transfer to a wire rack to cool completely. Serve alone or with whipped cream.
