Apple Pie Cupcakes

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In a large mixing bowl, cream together butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing just until combined.
  6. In a small bowl, toss diced apples with brown sugar and cornstarch until evenly coated.
  7. Gently fold the apple mixture into the batter.
  8. Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
  9. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow cupcakes to cool in the tin for a few minutes, then transfer to a wire rack to cool completely. Serve alone or with whipped cream.
