Cornbread baked atop hearty chili, loaded with cheese and green onions.
Ingredients
- 2 cups chili (homemade or canned)
- 1 cup shredded cheddar cheese
- 1 cup cornmeal or prepared cornbread mix
- 2 green onions, chopped
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9-inch dish.
- Spread chili in dish. Sprinkle ½ cup cheese on top.
- Prepare cornbread batter and pour over chili. Top with remaining cheese.
- Bake 25–30 minutes until cornbread is cooked through. Garnish with green onions.

10. Shepherd’s Pie Casserole

Ingredients
- 1 lb (450 g) ground beef
- 1 cup frozen peas and carrots

- 1 cup beef gravy
- 2 cups mashed potatoes
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch dish.
- Brown beef and onion in skillet; drain fat. Stir in peas, carrots, and gravy. Pour into dish.
- Spread mashed potatoes over top. Bake 20–25 minutes until heated and top slightly browned.

11. Veggie-Packed Zucchini Casserole

Ingredients
- 3 cups grated zucchini, drained

- ½ cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch dish.
- In a bowl, combine zucchini, cream cheese, sour cream, ¼ cup cheddar, garlic powder, salt, and pepper.
- Transfer to dish and sprinkle remaining cheese on top. Bake 25–30 minutes until bubbly and lightly browned.
