Directions
- Preheat the oven to 350°F (180°C) and grease a baking pan with butter, then dust with cocoa powder to prevent sticking.
- Prepare the cake batter: In a blender, beat the eggs, melted butter, milk, and brown sugar for about 3 minutes until well combined.
- Add the dry ingredients: Pour in the oat flour and cocoa powder, then blend until smooth. Add the baking powder last and pulse briefly to combine.
- Bake: Pour the batter into the prepared pan and bake for approximately 25 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool completely.
- Make the passion fruit cream brigadeiro: In a small saucepan over low heat, combine the fake condensed milk, butter, and passion fruit juice. Stir constantly until the mixture thickens and begins to pull away from the sides of the pan. Remove from heat and stir in cream. Set aside to cool.
- Make the chocolate “brigadeiro”: In a separate saucepan, combine the fake condensed milk, cocoa powder, and butter or coconut oil over low heat. Stir continuously for about 10 minutes until thickened. Remove from heat and let cool slightly.
- Assemble the cake: Slice the cooled cake horizontally into two equal layers. Spread the passion fruit brigadeiro over the bottom layer. Place the second cake layer on top. Cover the entire cake with the chocolate “brigadeiro” and smooth with a spatula.
- Serve: Slice and serve immediately, or refrigerate for 30–60 minutes to allow the layers to set further. Garnish with grated chocolate or passion fruit seeds if desired.
