Step 1: Prepare the Apple Filling
- In a skillet over medium heat, melt the butter.
- Add the diced apples, brown sugar, cinnamon, and nutmeg. Stir to coat evenly.
- Cook 5–7 minutes, stirring occasionally, until apples are tender.
- Stir in the cornstarch-water mixture and cook 1–2 minutes until thickened.
- Remove from heat, stir in vanilla extract, and let cool completely.
Step 2: Prepare the Cheesecake Filling
- In a medium bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
- Transfer to a piping bag or keep a spoon handy for filling the pies.
Step 3: Assemble the Pies
- Lay pie crust rounds on a clean surface.
- Place 1–2 teaspoons of cheesecake filling in the center of each round.
- Spoon 1–2 tablespoons of cooled apple filling on top.
- Brush edges with egg wash, fold over into a half-moon, and press gently to seal.
- Crimp edges with a fork to prevent leaks.
Step 4: Fry the Pies
- Heat oil in a deep skillet or pot to 350°F (175°C).
- Fry 2–3 pies at a time for 2–3 minutes per side, until golden brown.
- Remove with a slotted spoon and drain on paper towels.
Step 5: Prepare the Glaze
- Whisk powdered sugar, milk, and vanilla until smooth. Adjust milk for desired consistency.
Step 6: Glaze and Serve
- Drizzle glaze over warm pies or dip tops for full coverage.
- Let set a few minutes before serving.
