Spinach and Bacon Quiche

Directions

  1. Preheat your oven to 180°C (350°F). Lightly butter or grease a 28 cm (11-inch) pie dish.
  2. In a medium bowl, beat the eggs and combine with the cream. Stir in 100 g of shredded cheddar cheese and season with salt and pepper. Set aside.
  3. In a skillet over medium heat, cook the chopped bacon until crisp. Remove and drain on a paper towel.
  4. In the same pan, add 1 tbsp olive oil if needed and sauté the spinach until it wilts. Remove from heat and let cool slightly.
  5. Scatter half of the cooked spinach in the prepared pie dish. Layer with the cooked bacon, shredded carrots, and spring onions. Top with the remaining spinach to create an even layer.
  6. Pour the egg and cream mixture evenly over the vegetables and bacon, making sure it seeps through all the layers.
  7. Sprinkle extra shredded cheddar cheese evenly on top.
  8. Bake in the preheated oven for 45 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.
  9. Allow to cool for 5–10 minutes before slicing and serving.
