Southern Salmon Croquettes

Instructions

  1. Prepare the base. In a large mixing bowl, whisk together the flour and cornmeal until evenly combined.
  2. Mix the filling. Add flaked salmon, red bell pepper, sweet onion, beaten egg, Worcestershire sauce, seasoned salt, black pepper, garlic powder, mayonnaise, and chopped cilantro. Stir gently until all ingredients are incorporated.
  3. Form the croquettes. Shape the mixture into 6–8 evenly sized patties, pressing them lightly so they hold together.
  4. Heat the skillet. Pour enough olive oil into a large skillet to cover the bottom. Heat over medium-high heat until shimmering.
  5. Cook the croquettes. Place patties in the hot skillet and cook for 2–3 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary.
  6. Drain and serve. Transfer croquettes to a paper towel-lined plate to remove excess oil. Serve immediately with your favorite dipping sauce, tartar sauce, or a squeeze of fresh lemon.
