Directions
- Rinse catfish fillets and pat dry with paper towels.
- In a shallow bowl, pour buttermilk and soak the fillets for 10–15 minutes.
- In another bowl, combine cornmeal, flour, paprika, garlic powder, cayenne (if using), salt, and black pepper.
- Heat about 1 cm (½ inch) of vegetable oil in a large skillet over medium-high heat.
- Dredge each fillet in the cornmeal mixture, pressing lightly to coat evenly.
- Fry fillets in batches for 3–5 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan.
- Remove fried catfish and drain on paper towels.
- Serve immediately with lemon wedges and your choice of sides.
