Southern Fried Catfish

Directions

  1. Rinse catfish fillets and pat dry with paper towels.
  2. In a shallow bowl, pour buttermilk and soak the fillets for 10–15 minutes.
  3. In another bowl, combine cornmeal, flour, paprika, garlic powder, cayenne (if using), salt, and black pepper.
  4. Heat about 1 cm (½ inch) of vegetable oil in a large skillet over medium-high heat.
  5. Dredge each fillet in the cornmeal mixture, pressing lightly to coat evenly.
  6. Fry fillets in batches for 3–5 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan.
  7. Remove fried catfish and drain on paper towels.
  8. Serve immediately with lemon wedges and your choice of sides.
