Step 1: Prepare the Beef
Season the beef chunks generously with salt and pepper. Coat the meat lightly with flour.
Step 2: Brown the Beef
In a skillet, heat oil over medium-high heat. Brown the beef on all sides until it develops a rich color. Transfer the browned beef to the slow cooker.
Step 3: Add Vegetables and Herbs
Add the chopped onion, diced celery, minced garlic, fresh thyme, bay leaves, dried oregano, and Worcestershire sauce to the slow cooker. Pour in the beef stock and stir gently to combine.
Step 4: Slow Cook the Filling
Cover the slow cooker and cook on LOW for 7–8 hours, until the beef is tender and the flavors are fully developed.
Step 5: Prepare the Puff Pastry
About 1 hour before the cooking time ends, thaw the puff pastry. Preheat your oven to 400°F (200°C). Roll out the puff pastry on a floured surface and remove any seams.
Step 6: Cut and Decorate the Pastry
Use the slow cooker lid as a template to cut out a pastry lid that will fit perfectly over the filling. Decorate the top with any leftover pastry if desired and press the edges with a fork to seal.
Step 7: Egg Wash
In a small bowl, mix the egg white with water and brush over the pastry to give it a beautiful golden finish.
Step 8: Bake the Pastry
Place the pastry on a baking sheet and bake for 15 minutes until golden brown. Let the pastry cool for 30 minutes while the slow cooker filling continues to thicken.
Step 9: Assemble the Pie
Once the filling has thickened, turn off the slow cooker and place the baked pastry lid on top of the beef mixture.
Step 10: Serve
Serve hot with steamed vegetables, creamy mashed potatoes, or a crisp side salad. Pair with a glass of full-bodied red wine for an indulgent meal.
