Instructions

  1. Preheat the oven: Set your oven to 475º F (245º C) and line a cookie sheet with foil.
  2. Prepare the vegetables: In a large bowl, combine carrots, potatoes, and onions. Add minced garlic, olive oil, thyme, parsley, salt, and pepper. Toss until vegetables are evenly coated.
  3. Arrange on the baking sheet: Spread the vegetables in a single layer on the prepared cookie sheet. Cover with foil.
  4. Roast the vegetables: Bake in the preheated oven for 45 minutes.
  5. Uncover and continue roasting: Remove the foil and roast for an additional 30 minutes, stirring every 10 minutes, until the vegetables are golden brown and tender.
  6. Serve: Transfer to a serving dish and enjoy while warm.
