Ricotta Cake

Directions

  1. In a pan, sauté the apple slices with 1 tablespoon sugar and lemon juice until softened. Set aside to cool.
  2. In a mixing bowl, beat eggs with the remaining sugar until light and fluffy.
  3. Add sunflower oil, ricotta cheese, sifted flour, baking powder, vanilla powder, and rum. Mix until smooth and fully combined.
  4. Pour the batter into a greased or lined cake pan. Gently fold in the sautéed apples or arrange them on top.
  5. Bake in a preheated oven at 175°C (350°F) for 45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool before slicing and serving.
