Directions

  1. Preheat the oven. Set the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  2. Cream sugar and oil. In a large mixing bowl, beat the sugar and oil together until smooth and creamy. This helps create a tender, moist cake.
  3. Add eggs and coconut essence. Incorporate the eggs one at a time, beating well after each addition, then add the coconut essence. The batter will be aromatic and silky.
  4. Add lemon and milk. Mix in the lemon zest, juice, and milk. Beat until the mixture has body and is evenly combined. The batter should be slightly pourable but thick enough to hold its shape.
  5. Combine dry ingredients. In a separate bowl, whisk together the flour, baking powder, and baking soda to ensure even distribution.
  6. Incorporate dry ingredients. Gradually fold the flour mixture into the wet batter using a spatula or hand mixer on low speed. Mix until smooth and a toothpick inserted into the center comes out clean.
  7. Bake. Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick comes out clean. The cake should be golden on top and spring back lightly when touched.
  8. Cool slightly. Allow the cake to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the glaze. In a small bowl, whisk the powdered sugar and lemon juice together with a hand mixer or whisk until smooth and pourable. Adjust consistency with more juice or sugar if needed.
  10. Glaze the cake. Once the cake is completely cool, drizzle the lemon glaze over the top, allowing it to run down the sides for a beautiful finish. Slice and serve.
