Ingredients

For the Roulades:

  • 750 g (1 lb 10 oz) minced meat (half beef, half pork)
  • 1 roll of stale bread (or 2 slices of toast), soaked
  • 4 medium onions
  • 2 large eggs
  • 1 tbsp medium-hot mustard
  • 1 tsp sweet paprika (noble sweet)
  • 8 slices smoked Black Forest ham
  • 8 small gherkins
  • Salt and freshly ground black pepper, to taste

For the Sauce:

  • 3 tbsp oil
  • 1 tbsp all-purpose flour, heaped
  • 100 g (3.5 oz) whipping cream
  • 2 tsp clear granulated broth (or vegetable/chicken bouillon)
  • ½ bunch fresh parsley, chopped
