Directions

  1. Preheat your oven to 200°C / 400°F. Line a large baking tray with parchment paper and set aside.
  2. In a small bowl, whisk together the almond flour and baking powder until well combined.
  3. In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 20-second intervals until warm, then whisk together until smooth.
  4. Transfer the melted cheese mixture into a food processor fitted with a dough blade. Add the eggs and dry ingredients. Blend until the dough is smooth and uniform.
  5. Roll the dough into a large oval shape on the prepared baking tray. Sprinkle the shredded mozzarella on top, leaving a ½-inch border around the edges.
  6. Bake for 10–12 minutes, or until the cheese on top turns golden brown.
  7. Remove from the oven, sprinkle with chopped cilantro, and slice lengthwise. Serve warm.
