Directions
- Preheat your oven to 200°C / 400°F. Line a large baking tray with parchment paper and set aside.
- In a small bowl, whisk together the almond flour and baking powder until well combined.
- In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 20-second intervals until warm, then whisk together until smooth.
- Transfer the melted cheese mixture into a food processor fitted with a dough blade. Add the eggs and dry ingredients. Blend until the dough is smooth and uniform.
- Roll the dough into a large oval shape on the prepared baking tray. Sprinkle the shredded mozzarella on top, leaving a ½-inch border around the edges.
- Bake for 10–12 minutes, or until the cheese on top turns golden brown.
- Remove from the oven, sprinkle with chopped cilantro, and slice lengthwise. Serve warm.
