Hot Cross Buns

Directions

  1. Preheat your oven to 180°C (350°F).
  2. In a small bowl, combine yeast, sugar, and lukewarm milk. Stir, cover, and let sit for 5–10 minutes until frothy.
  3. In a large mixing bowl, sift together the flour and salt. Add cinnamon powder and raisins, then pour in melted butter and beaten eggs. Mix well.
  4. Pour the yeast mixture into the flour mixture and knead for about 10 minutes, or until the dough is smooth and elastic.
  5. Cover the dough and place it in a warm spot for about 1 hour, or until it doubles in size.
  6. Punch down the dough, then knead briefly. Divide into tennis ball-sized portions and place on a greased or lined baking tray.
  7. For the cross, mix self-raising flour with milk to form a smooth paste. Transfer to a piping bag and pipe a cross over each bun.
  8. Bake in the preheated oven for 30–40 minutes, until golden brown and cooked through. Remove from the oven and allow to cool slightly before serving.
