Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion and bell pepper and cook for 4–5 minutes until softened.
- Stir in garlic and cook until fragrant, about 30 seconds.
- Add ground beef, season with salt and pepper, and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Stir in chili powder, cumin, paprika, oregano, and cayenne. Cook for 1 minute to bloom the spices.
- Add tomato paste and stir until well combined.
- Pour in diced tomatoes, tomato sauce, and beef broth. Stir well.
- Add beans and bring chili to a gentle boil.
- Reduce heat to low and simmer uncovered for 25–35 minutes, stirring occasionally, until thickened.
- Taste and adjust seasoning as needed.
