Homemade Chili

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and bell pepper and cook for 4–5 minutes until softened.
  3. Stir in garlic and cook until fragrant, about 30 seconds.
  4. Add ground beef, season with salt and pepper, and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  5. Stir in chili powder, cumin, paprika, oregano, and cayenne. Cook for 1 minute to bloom the spices.
  6. Add tomato paste and stir until well combined.
  7. Pour in diced tomatoes, tomato sauce, and beef broth. Stir well.
  8. Add beans and bring chili to a gentle boil.
  9. Reduce heat to low and simmer uncovered for 25–35 minutes, stirring occasionally, until thickened.
  10. Taste and adjust seasoning as needed.
