Directions

  1. Activate yeast: Dissolve the dry yeast in the warm water. Mix with 100 g of flour, knead lightly, and let rest for 1 hour until bubbly and foamy.
  2. Prepare dough: In a large mixing bowl or stand mixer, combine the remaining flour, sugar, egg yolks, whole eggs, and milk. Begin kneading, then gradually add softened butter and salt. Knead until the dough is smooth, elastic, and slightly tacky.
  3. First rise: Shape the dough into a ball and place it on a lightly floured surface. Cover with a cloth and let rise for about 3 hours, or until doubled in size.
  4. Shape buns: Divide the dough into evenly sized balls (about 100–120 g each). Roll the tops gently in sesame seeds to coat.
  5. Second rise: Place the shaped buns on a baking tray or skillet. Cover with a cloth and let rest for 1 hour until slightly puffy.
  6. Egg wash: Lightly dilute the egg white with a drop of water and brush over the tops of the buns for a shiny finish.
  7. Bake: Preheat the oven to 190°C (374°F). Bake the buns for 15 minutes, or until golden brown. Allow to cool slightly before slicing and using for burgers.
