Grilled Sausage and Peppers

Directions

  1. Preheat your grill to medium-high heat (about 375–400°F / 190–200°C). If cooking indoors, preheat a large skillet over medium heat.
  2. Brush the sausages lightly with olive oil. Place them on the grill and cook, turning occasionally, until browned and fully cooked through, about 12–15 minutes. Internal temperature should reach 160°F (71°C).
  3. While the sausages are grilling, heat olive oil in a cast-iron skillet or large pan over medium heat. Add sliced peppers and onions, season with salt and black pepper, and sauté for 5–7 minutes until slightly softened.
  4. Add minced garlic and continue cooking for 1–2 minutes until fragrant.
  5. Pour in the beef broth, reduce heat to medium-low, and cover. Let the peppers and onions simmer for another 5–10 minutes, stirring occasionally, until tender and flavorful.
  6. Once the sausages are cooked, remove from the grill and let them rest for a few minutes. Slice them diagonally if desired.
  7. Serve sausages alongside the peppers and onions, or slice and layer them into rolls for a classic sausage and pepper sandwich. Garnish with chopped parsley if desired.
