Directions
- Preheat your grill to medium-high heat (about 375–400°F / 190–200°C). If cooking indoors, preheat a large skillet over medium heat.
- Brush the sausages lightly with olive oil. Place them on the grill and cook, turning occasionally, until browned and fully cooked through, about 12–15 minutes. Internal temperature should reach 160°F (71°C).
- While the sausages are grilling, heat olive oil in a cast-iron skillet or large pan over medium heat. Add sliced peppers and onions, season with salt and black pepper, and sauté for 5–7 minutes until slightly softened.
- Add minced garlic and continue cooking for 1–2 minutes until fragrant.
- Pour in the beef broth, reduce heat to medium-low, and cover. Let the peppers and onions simmer for another 5–10 minutes, stirring occasionally, until tender and flavorful.
- Once the sausages are cooked, remove from the grill and let them rest for a few minutes. Slice them diagonally if desired.
- Serve sausages alongside the peppers and onions, or slice and layer them into rolls for a classic sausage and pepper sandwich. Garnish with chopped parsley if desired.
