German Apple Cake

Instructions

  1. Prepare the dough. In a bowl, beat together eggs, sugar, and a pinch of salt until smooth and fluffy.
  2. Combine dry ingredients. In another bowl, mix the flour and baking powder. Gradually add to the egg mixture, beating until fully incorporated.
  3. Bake the base. Pour the batter into a greased baking dish and spread evenly with a spatula. Preheat oven to 180°C (350°F) and bake for 25 minutes. Let it cool completely, then carefully cut horizontally in half.
  4. Cook the apples. Peel and chop the apples. In a pan, combine apples, 750 ml apple juice, and 45 g sugar. Cook over medium heat, stirring gently to avoid sticking.
  5. Prepare pudding mixture. In a small bowl, mix 100 ml apple juice with the vanilla pudding packets until smooth and lump-free. Add this to the apple mixture and cook for 2 more minutes. Remove from heat.
  6. Assemble apple layer. Pour the apple-pudding mixture over the bottom layer of the cake, smoothing the surface with a spatula. Let cool.
  7. Prepare the cream layer. In a separate bowl, beat the cream, cream cheese, and 60 g sugar until light and fluffy.
  8. Top the cake. Spread the cream mixture evenly over the apple layer. Refrigerate for at least 4 hours to set.
  9. Add the crumble topping. Crush the top layer of the cake (the half you set aside at the beginning) and sprinkle it over the cream layer just before serving.
