Directions
- Preheat oven. Set the oven to 375°F (190°C).
- Prepare butter. Pour the melted butter into the center of a 9″ x 13″ baking dish; do not spread it.
- Mix batter. In a separate bowl, combine flour, 1 cup granulated sugar, salt, and baking powder. Slowly add milk and vanilla extract, stirring to blend. Pour this mixture gently over the butter in the baking dish without stirring.
- Prepare peaches. In a medium saucepan over high heat, combine brown sugar, peach slices, and lemon juice. Stir constantly until the sugar is completely melted and the peaches release their juices.
- Layer peaches. Pour the peach mixture over the batter in the baking dish. Do not stir.
- Bake. Place in the oven and bake for 40–45 minutes, or until the top is golden brown and the cobbler is set.
- Serve. Let the cobbler cool slightly and serve warm, optionally with vanilla ice cream or whipped cream.
