Georgia Peach Cobbler

Directions

  1. Preheat oven. Set the oven to 375°F (190°C).
  2. Prepare butter. Pour the melted butter into the center of a 9″ x 13″ baking dish; do not spread it.
  3. Mix batter. In a separate bowl, combine flour, 1 cup granulated sugar, salt, and baking powder. Slowly add milk and vanilla extract, stirring to blend. Pour this mixture gently over the butter in the baking dish without stirring.
  4. Prepare peaches. In a medium saucepan over high heat, combine brown sugar, peach slices, and lemon juice. Stir constantly until the sugar is completely melted and the peaches release their juices.
  5. Layer peaches. Pour the peach mixture over the batter in the baking dish. Do not stir.
  6. Bake. Place in the oven and bake for 40–45 minutes, or until the top is golden brown and the cobbler is set.
  7. Serve. Let the cobbler cool slightly and serve warm, optionally with vanilla ice cream or whipped cream.
