Directions
- Preheat your oven to 400°F (200°C).
- Place the butter into a roasting pan and melt it in the oven. Once melted, swirl the pan to coat the bottom evenly.
- Arrange the chicken drumsticks and thighs, potato chunks, and unpeeled garlic cloves in the pan. Sprinkle generously with salt and black pepper. Turn the chicken, potatoes, and garlic to coat with the melted butter.
- Bake for about 40 minutes, basting three times with the pan drippings. The chicken should no longer be pink inside, and juices should run clear.
- Brush maple syrup over the chicken pieces and spoon pan drippings over the potatoes. Return the pan to the oven.
- Continue baking for an additional 20 minutes, until the chicken is fully cooked and the potatoes are tender and golden brown. Use an instant-read thermometer inserted into the thickest part of a thigh to ensure it reaches 165°F (74°C).
- To serve, squeeze the roasted garlic from the cloves and spread the soft garlic over the chicken. Pour any remaining pan juices over the chicken and potatoes for extra flavor.
