- Prepare the Potatoes
Wash and cut the baby potatoes into halves or quarters so they cook evenly. - Cook the Potatoes
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the potatoes, season with half the salt, pepper, and paprika, and cook for 12–15 minutes, stirring occasionally, until golden brown and fork-tender. Remove the potatoes from the skillet and set aside. - Sear the Steak
In the same skillet, add the remaining olive oil and increase the heat to medium-high. Add the steak cubes in a single layer. Season with the remaining salt, pepper, and garlic powder. - Cook the Steak
Sear the steak pieces for 2–3 minutes per side until browned and cooked to your preferred doneness. - Make the Garlic Butter
Reduce heat to medium. Add butter and minced garlic to the skillet. Cook for about 30 seconds until fragrant, stirring so the garlic doesn’t burn. - Combine Steak and Potatoes
Return the cooked potatoes to the skillet and toss everything together so the garlic butter coats the steak and potatoes. - Add Herbs and Finish
Sprinkle thyme or rosemary over the mixture and cook for another 1–2 minutes to blend the flavors. - Garnish and Serve
Remove from heat and sprinkle with fresh parsley. Serve immediately while hot and buttery.
