Directions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry slightly and place it on the prepared baking sheet. Score a 1-inch border around the edges with a sharp knife.
- In a medium bowl, combine almond flour, granulated sugar, softened butter, egg, and vanilla extract. Mix until smooth and creamy.
- Spread the frangipane mixture evenly inside the scored border of the pastry.
- Arrange the fresh fruits on top of the frangipane in an appealing pattern.
- Warm the apricot jam for a few seconds in the microwave until brushable. Gently brush it over the fruits for a glossy finish.
- Bake in the preheated oven for 25–30 minutes, or until the pastry edges are golden and the frangipane is set.
- While the tarte is baking, toast the sliced almonds in a dry pan over medium heat until lightly golden and fragrant.
- Once baked, remove the tarte from the oven, sprinkle the toasted almonds over the top, and dust lightly with powdered sugar.
- Let the tarte cool slightly before slicing and serving.
