French Onion Soup Stuffed Meatloaf

Directions

  1. Preheat oven. Set the oven to 375°F (190°C) and spray a large loaf pan with cooking spray.
  2. Cook vegetables. In a large skillet, melt butter over medium heat. Add diced onions, green bell peppers, mushrooms, salt, and pepper.
  3. Caramelize veggies. Let vegetables brown for 1–2 minutes without stirring, then stir and continue to brown for another 1–2 minutes. Remove from heat and let cool for 5 minutes.
  4. Prepare meatloaf mixture. In a large bowl, combine ground beef, ketchup, Worcestershire sauce, eggs, panko breadcrumbs, and the cooled vegetable mixture. Mix gently until just combined.
  5. Assemble the loaf. Place half of the meat mixture into the prepared loaf pan, pressing gently to form an even layer. Arrange half of the provolone cheese slices in a 2-inch wide section in the center of the meat layer.
  6. Top with remaining meat. Cover the cheese with the remaining meat mixture and shape into a rounded loaf.
  7. Bake the meatloaf. Cook for 40 minutes in the preheated oven.
  8. Add remaining cheese. Remove meatloaf from oven and top with the remaining provolone slices. Return to oven and bake for an additional 15–20 minutes, until the cheese is melted and lightly golden.
  9. Rest and serve. Allow the meatloaf to rest for 10 minutes before slicing. Serve warm with your favorite sides.
