Flatbread Stuffed with Minced Meat

Directions

  1. In a small bowl, dissolve sugar and yeast in warm water. Let it sit 5–10 minutes until frothy.
  2. In a large bowl, combine flour and salt. Make a well in the center and add yeast mixture and olive oil.
  3. Knead the dough for 8–10 minutes until smooth and elastic. Cover with a damp cloth and let rise for 1 hour or until doubled in size.
  4. While the dough is rising, prepare the filling. Heat a skillet over medium heat, add minced meat, onion, and garlic. Cook until meat is browned and onions are soft.
  5. Add cumin, paprika, salt, black pepper, and optional chili. Stir in parsley, cook 1–2 more minutes, then remove from heat and let cool slightly.
  6. Preheat a non-stick skillet or griddle over medium heat.
  7. Divide dough into 6 equal portions. Roll each portion into a thin circle, about 15 cm (6 inches) in diameter.
  8. Place 2–3 tablespoons of filling in the center of each dough circle. Fold edges over and seal, shaping into a flat, stuffed disc.
  9. Lightly brush skillet with oil or butter. Cook each flatbread 3–4 minutes per side, until golden brown and cooked through.
  10. Serve warm with yogurt, salad, or your favorite dipping sauce.
