Directions
- In a small bowl, dissolve sugar and yeast in warm water. Let it sit 5–10 minutes until frothy.
- In a large bowl, combine flour and salt. Make a well in the center and add yeast mixture and olive oil.
- Knead the dough for 8–10 minutes until smooth and elastic. Cover with a damp cloth and let rise for 1 hour or until doubled in size.
- While the dough is rising, prepare the filling. Heat a skillet over medium heat, add minced meat, onion, and garlic. Cook until meat is browned and onions are soft.
- Add cumin, paprika, salt, black pepper, and optional chili. Stir in parsley, cook 1–2 more minutes, then remove from heat and let cool slightly.
- Preheat a non-stick skillet or griddle over medium heat.
- Divide dough into 6 equal portions. Roll each portion into a thin circle, about 15 cm (6 inches) in diameter.
- Place 2–3 tablespoons of filling in the center of each dough circle. Fold edges over and seal, shaping into a flat, stuffed disc.
- Lightly brush skillet with oil or butter. Cook each flatbread 3–4 minutes per side, until golden brown and cooked through.
- Serve warm with yogurt, salad, or your favorite dipping sauce.
