  • 2 tbsp (30 ml) olive oil

  • 2 medium carrots, peeled and sliced (150 g / 5 oz)
  • 2 medium potatoes, peeled and diced (300 g / 10 oz)
  • 1 cup (150 g) frozen peas
  • 1 cup (120 g) corn kernels
  • 1 tsp (2 g) salt
  • ½ tsp (1 g) black pepper
  • 1 tsp (1 g) dried thyme
  • 1 tsp (1 g) dried rosemary

For the Sauce

  • 2 tbsp (30 g) butter
  • 2 tbsp (15 g) all-purpose flour
  • 480 ml (2 cups) milk
  • ½ cup (50 g) grated cheddar cheese
  • 1 tsp (5 ml) Dijon mustard
  • Optional: ½ tsp smoked paprika

Topping

  • ½ cup (50 g) breadcrumbs or crushed crackers
  • 2 tbsp (30 g) butter, melted
  • ¼ cup (25 g) additional grated cheese
