EGGPLANT PIZZA IN 10 MINUTES | LOW CARB AND HEALTHY

Instructions

  1. Preheat oven to 200C/400F. Slice eggplant lengthwise into ⅓-inch thick slices.
  2. Brush both sides with olive oil, place on a lined baking sheet, and sprinkle with salt and pepper. Bake 12–15 minutes until soft.
  3. Spread pizza sauce on each eggplant slice, sprinkle with some of the mozzarella and provolone cheeses.
  4. Top with onions, mushrooms, and bell peppers. Sprinkle remaining cheese and Italian seasonings on top.
  5. Switch oven to broil and bake 5–10 minutes, or until cheese is melted and golden.
  6. Remove from oven and serve immediately.
