Instructions
- Preheat oven to 200C/400F. Slice eggplant lengthwise into ⅓-inch thick slices.
- Brush both sides with olive oil, place on a lined baking sheet, and sprinkle with salt and pepper. Bake 12–15 minutes until soft.
- Spread pizza sauce on each eggplant slice, sprinkle with some of the mozzarella and provolone cheeses.
- Top with onions, mushrooms, and bell peppers. Sprinkle remaining cheese and Italian seasonings on top.
- Switch oven to broil and bake 5–10 minutes, or until cheese is melted and golden.
- Remove from oven and serve immediately.
