Directions
- In a medium saucepan over medium heat, combine the water and butter. Heat until the butter is fully melted and the mixture comes to a gentle boil.
- Add the salt and flour all at once. Stir vigorously with a wooden spoon until a smooth dough forms. Remove from heat and let cool slightly.
- Add the vanilla extract to the dough. Then, break in the eggs one at a time, mixing well with a hand mixer after each addition until the dough is smooth and slightly elastic.
- Transfer the dough to a pastry bag fitted with a round tip. Poach 12 circles onto a baking sheet lined with parchment paper.
- Heat oil in a deep fryer or large pot to 180°C (350°F). Carefully slide the dough circles into the hot oil.
- Fry the doughnuts for 3–4 minutes on each side, or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
- Let cool slightly before dusting with powdered sugar or drizzling with syrup. Serve warm.
