Prepare the Base
- Separate the filling from the Oreo cookies and reserve it. Crush the cookies in a food processor, keeping 1/3 cup aside for later. Mix the remaining crushed cookies with melted butter.
- Press the cookie-butter mixture evenly into the bottom of a 20 cm (8-inch) round cake pan. Refrigerate while preparing the filling.
Make the Cheesecake Filling
- In a large bowl, beat cream cheese with a mixer until smooth.
- Add whipping cream, condensed milk, reserved Oreo filling, lemon juice, and vanilla essence. Beat for 5 minutes until well combined and creamy.
- Dissolve gelatin in hot milk and mix into the cream mixture until fully incorporated.
- Pour the mixture over the prepared cookie base and refrigerate until set, about 4–6 hours or overnight.
Prepare the Chocolate Ganache
- Heat whipping cream in a small pot over low heat. Add dark chocolate chips and stir until fully melted and smooth.
- Stir in the butter and let the ganache cool slightly.
- Pour the ganache over the set cheesecake. Decorate with whipped cream, whole Oreo cookies, and additional dark chocolate chips if desired.
