Introduction:

Courgettes (zucchinis) are a versatile vegetable, light in flavor yet perfect for showcasing fresh, creamy fillings. These Courgette Rolls are an elegant appetizer or side dish that combine thinly sliced zucchini with a flavorful cream cheese and herb filling. Their bright green hue, tender texture, and delicate taste make them a crowd-pleaser at dinner parties, brunches, or even as a healthy snack. The combination of fresh herbs, creamy cheese, and optional fillings like smoked salmon or roasted peppers creates a bite that’s both visually appealing and utterly delicious.

Ingredients:

For the Zucchini:

  • 2 medium zucchinis (~400 g / 0.9 lb), thinly sliced lengthwise
  • Salt and freshly ground black pepper, to taste
  • Olive oil spray or 1 tsp (5 ml) olive oil for brushing

For the Filling:

  • 150 g (5 oz) cream cheese, softened
  • 2 tbsp (8 g) fresh parsley, finely chopped
  • 1 tbsp (3 g) fresh basil, chopped
  • 1 clove garlic, minced
  • 50 g (1.75 oz) roasted red peppers, finely chopped (optional)
  • 50 g (1.75 oz) smoked salmon, chopped (optional)
  • 1 tsp (5 ml) lemon juice (optional, for freshness)
  • Salt and pepper, to taste

For Garnish (Optional):

  • Lemon zest
  • Fresh herbs (parsley, basil)
  • Grated Parmesan or crumbled feta
