Ingredients:
For the Zucchini:
- 2 medium zucchinis (~400 g / 0.9 lb), thinly sliced lengthwise
- Salt and freshly ground black pepper, to taste
- Olive oil spray or 1 tsp (5 ml) olive oil for brushing
For the Filling:
- 150 g (5 oz) cream cheese, softened
- 2 tbsp (8 g) fresh parsley, finely chopped
- 1 tbsp (3 g) fresh basil, chopped
- 1 clove garlic, minced
- 50 g (1.75 oz) roasted red peppers, finely chopped (optional)
- 50 g (1.75 oz) smoked salmon, chopped (optional)
- 1 tsp (5 ml) lemon juice (optional, for freshness)
- Salt and pepper, to taste
For Garnish (Optional):
- Lemon zest
- Fresh herbs (parsley, basil)
- Grated Parmesan or crumbled feta
