Condensed Milk Cake

Instructions

  1. In a blender, combine the eggs, condensed milk, lemon zest, and vanilla essence. Blend until smooth.
  2. With the blender running, gradually add the melted butter and blend until fully incorporated.
  3. Add the sifted flour and baking powder, and blend again until the mixture is lump-free and smooth.
  4. Grease and flour a loaf pan. Pour the batter into the prepared pan, spreading evenly.
  5. Bake in a preheated oven at 180°C (350°F) for 25 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove the cake from the oven and let it cool for 15 minutes in the pan. Unmold and let cool completely on a wire rack.
  7. To prepare the glaze, mix the icing sugar with the lemon juice until smooth. Drizzle evenly over the cooled cake.
