Instructions
- In a blender, combine the eggs, condensed milk, lemon zest, and vanilla essence. Blend until smooth.
- With the blender running, gradually add the melted butter and blend until fully incorporated.
- Add the sifted flour and baking powder, and blend again until the mixture is lump-free and smooth.
- Grease and flour a loaf pan. Pour the batter into the prepared pan, spreading evenly.
- Bake in a preheated oven at 180°C (350°F) for 25 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool for 15 minutes in the pan. Unmold and let cool completely on a wire rack.
- To prepare the glaze, mix the icing sugar with the lemon juice until smooth. Drizzle evenly over the cooled cake.
