Chocolate Espresso Layer Cake with Whipped Ganache

Directions

1. Prepare the Chocolate Espresso Cake Layers:

  • Preheat oven to 175°C (350°F). Grease and line three 20 cm (8-inch) round cake pans.
  • In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, combine granulated sugar, brown sugar, vegetable oil, eggs, and vanilla. Mix until smooth.
  • Alternately add dry ingredients and buttermilk, mixing gently. Stir in hot espresso until batter is smooth.
  • Divide batter evenly among prepared pans. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.

2. Prepare the Whipped Chocolate Ganache Filling:

  • Heat heavy cream until just simmering, then pour over chopped dark chocolate in a bowl. Let sit 1–2 minutes, then stir until smooth.
  • Add butter and vanilla extract, stirring until incorporated. Chill for 30–45 minutes until slightly firm, then whip with a hand mixer until light and fluffy.

3. Prepare the Espresso Buttercream Frosting:

  • Beat butter until creamy. Gradually add powdered sugar, cocoa powder, and instant espresso powder.
  • Add heavy cream and vanilla extract, beating until smooth and fluffy. Adjust consistency with more cream or powdered sugar as needed.

4. Assemble the Cake:

  • Place one cake layer on a serving plate. Spread a layer of whipped ganache evenly over the top. Repeat with the second layer.
  • Place the third cake layer on top and frost the entire cake with espresso buttercream. Smooth the sides and top.

5. Decorate:

  • Garnish with chocolate curls, whole espresso beans, and a light dusting of cocoa powder for a professional finish.
