Instructions
- Place the beef strips, green and red bell peppers, and sliced onion in an electric pressure cooker or Instant Pot.
- Sprinkle garlic powder, ground ginger, black pepper, and brown sugar evenly over the beef and vegetables.
- Pour soy sauce over the mixture.
- In a small bowl, mix cornstarch with a little water to make a smooth slurry. Set aside.
- Pour beef broth over the ingredients in the cooker and stir to combine.
- Close the pressure cooker lid and cook on high pressure for 8–10 minutes.
- Carefully release the pressure and open the lid.
- If the sauce needs thickening, turn on the sauté function and stir in the cornstarch slurry until the sauce reaches your desired consistency.
- Serve hot over steamed rice or noodles, and enjoy!
