Chicken Nuggets with Garlic Aioli

Ingredients
For the Chicken Nuggets:
• 1 ½ pounds (3 large) boneless, skinless chicken breasts
• 2 large eggs
• 1/3 cup mayonnaise (80 ml / 2.7 fl oz)
• 1/3 cup all-purpose flour, cornstarch, or gluten-free potato starch (40 g / 1.4 oz)
• 4 ounces mozzarella, grated (115 g / 1 1/3 cups)
• 1 ½ teaspoons chopped fresh dill
• ½ teaspoon salt (or to taste)
• 1/8 teaspoon black pepper
• 2 tablespoons very light olive oil (or other high-heat cooking oil) for frying
Optional Garlic Aioli:
• 1/3 cup mayonnaise (80 ml / 2.7 fl oz)
• 1 clove garlic, pressed
• ½ tablespoon lemon juice (7 ml / 0.25 fl oz)
• ¼ teaspoon salt
• 1/8 teaspoon black pepper
