Cheesy Garlic Butter Corn on the Cob

Directions

  1. Prepare the Corn
Preheat your oven to 400°F (200°C). Lightly brush each ear of corn with olive oil and place them on a baking tray lined with parchment paper or foil. This helps the corn roast evenly and enhances its natural sweetness.
  2. Roast the Corn
Roast the corn in the preheated oven for 15–20 minutes, turning once halfway through. The kernels should look tender and lightly golden with a roasted aroma.
  3. Make the Garlic Butter
While the corn is roasting, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to let it brown.
  4. Season the Butter
Remove the garlic butter from heat and stir in the salt, black pepper, and optional chili flakes or paprika. This buttery mixture is where all the flavor magic begins.
  5. Coat the Corn
Remove the corn from the oven and generously brush each ear with the warm garlic butter, making sure it seeps into every nook between the kernels.
  6. Add the Cheese
Sprinkle the Parmesan and mozzarella evenly over the corn. The Parmesan adds sharp, savory depth, while the mozzarella brings that irresistible melty pull.
  7. Melt and Bubble
Return the corn to the oven for another 5–7 minutes, or until the cheese is fully melted and lightly bubbly. For a golden top, switch to broil for the last 1–2 minutes, keeping a close eye on it.
  8. Garnish and Serve
Remove from the oven and sprinkle with fresh chopped parsley. Serve hot while the cheese is still gooey and the garlic butter aroma is at its peak.
