Instructions

  1. Preheat your broiler to 450°F (232°C). Line a baking sheet with aluminum foil for easy cleanup.
  2. Using sharp kitchen shears, cut the top of each lobster shell from the base to the tail, leaving the tail fan intact.
  3. Carefully lift the lobster meat out of the shell, keeping it whole. Rest the meat back on the closed shell for a natural presentation.
  4. Season each lobster tail generously with kosher salt, white pepper, and paprika, making sure the spices coat the surface evenly.
  5. Brush each tail with melted butter, ensuring the meat is well coated. Reserve some butter for basting halfway through broiling.
  6. Arrange the lobster tails on the prepared baking sheet and place under the broiler. Broil for 7–10 minutes, depending on size, until the meat turns opaque and pink and the edges begin to brown slightly.
  7. Halfway through broiling, baste the lobster meat with additional melted butter for extra flavor and moisture.
  8. Remove from the oven and let the lobster rest for a minute or two. Serve immediately with lemon wedges and any remaining butter for dipping.
