Breakfast Cake (No Flour or Eggs!)

Directions

  1. Preheat oven to 180°C (350°F) and grease a 20 cm (8-inch) square baking pan.
  2. In a large bowl, mash bananas until smooth. Stir in honey, applesauce, and vanilla extract.
  3. In a separate bowl, mix oats, baking powder, cinnamon, and nuts (and optional chocolate or dried fruit).
  4. Combine wet and dry ingredients, mixing until just incorporated. The batter will be thick.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 25–30 minutes, or until a toothpick inserted comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice into squares and serve warm or at room temperature.
