- Melt 1 tablespoon butter in a large skillet over medium heat. Add sliced onion and bratwursts; cook about 10 minutes, turning occasionally, until all sides are browned.
- Pour in the beer, reserving 1/4 cup for the cheese sauce. Reduce heat to medium-low and simmer for about 15 minutes, until beer has reduced and brats are fully cooked.
- To make the beer cheese sauce, melt 1 tablespoon butter in a small saucepan over medium-low heat. Stir in flour and spices, cooking 1–2 minutes while stirring.
- Add the milk and reserved beer all at once. Remove from heat, then stir in shredded cheese and horseradish until smooth and creamy.
- Place the brats in buns, then top each with beer cheese sauce, crumbled bacon, and minced chives.
- Serve immediately while warm and enjoy!
