Beer Brats with Beer Cheese Sauce

Instructions

  1. Melt 1 tablespoon butter in a large skillet over medium heat. Add sliced onion and bratwursts; cook about 10 minutes, turning occasionally, until all sides are browned.
  2. Pour in the beer, reserving 1/4 cup for the cheese sauce. Reduce heat to medium-low and simmer for about 15 minutes, until beer has reduced and brats are fully cooked.
  3. To make the beer cheese sauce, melt 1 tablespoon butter in a small saucepan over medium-low heat. Stir in flour and spices, cooking 1–2 minutes while stirring.
  4. Add the milk and reserved beer all at once. Remove from heat, then stir in shredded cheese and horseradish until smooth and creamy.
  5. Place the brats in buns, then top each with beer cheese sauce, crumbled bacon, and minced chives.
  6. Serve immediately while warm and enjoy!
