Directions
Step 1: Prepare the Liver
Rinse the liver slices under cold water and pat dry. Season with salt and black pepper, then lightly dredge in flour, shaking off any excess.
Step 2: Caramelize the Onions
Heat 1 tablespoon olive oil in a skillet over medium heat. Add the sliced onions with salt and pepper. Cook, stirring occasionally, until soft, golden, and caramelized, about 12–15 minutes. Remove from the skillet and set aside.
Step 3: Cook the Liver
In the same skillet, add butter and remaining olive oil over medium-high heat. Add the liver slices and cook 2–3 minutes per side until browned on the outside but still slightly pink inside. Avoid overcooking to keep the liver tender.
Step 4: Combine and Serve
Return the caramelized onions to the skillet and warm them over the liver for 1–2 minutes. Transfer to a plate, garnish with parsley if desired, and serve immediately.
