Ingredients
For the Steak:
- 1 lb (450 g) chuck steak or preferred cut
- Salt, to taste
- 1 tablespoon coarse steak seasoning
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1 tablespoon olive oil
- 1 tablespoon butter
For the Gorditas:
- 1 3/4 cups (415 ml) hot water
- 1/2 teaspoon salt
- 2 cups (240 g) yellow or white corn masa harina
- 1 teaspoon baking powder
- 1 1/2 tablespoons olive oil, plus extra for cooking
For the Salsa Verde:
- 2–3 large tomatillos, washed and quartered
- 2–3 serranos, chopped
- 1 garlic clove, sliced
- 1/4 sweet onion
- 1 tablespoon lime juice
- 1/2 teaspoon red pepper flakes (optional)
- Salt, to taste
